    This miso caramel french toast is sweet, savory, and deeply comforting — brioche soaked in vanilla custard, pan-fried until golden, then finished with a warm miso caramel that’s rich without being heavy. The whipped topping is light, barely sweet, and folded with just enough caramel to make each bite feel intentional.

    It’s the kind of breakfast you make when you want to linger at the table a little longer. Best shared, but just as good kept to yourself.

    Miso Caramel French Toast

    Ingredients

    • Miso Caramel Sauce
    • ½ cup sugar

    • 2 tbsp water

    • 3 tbsp unsalted butter

    • ½ cup heavy cream, warmed

    • 1½ tbsp white miso paste

    • 1 tsp vanilla extract

    • pinch of salt

    • French Toast
    • 6 thick slices brioche or challah

    • 3 eggs

    • ¾ cup whole milk or half and half

    • 1 tbsp sugar

    • 1 tsp vanilla

    • ½ tsp cinnamon

    • pinch of salt

    • butter for pan

    • Miso Caramel Whipped Topping
    • 1 cup cold heavy whipping cream

    • 2 to 3 tbsp miso caramel sauce

    • 1 tbsp powdered sugar

    • ½ tsp vanilla

    Directions

    • Miso Caramel Sauce
    • In a saucepan over medium heat, combine sugar and water. Do not stir, only swirl the pan.
    • Cook until deep amber in color, about 5 to 7 minutes.
    • Lower heat and whisk in butter.
    • Slowly pour in warm cream while whisking. It will bubble up.
    • Stir in miso paste, vanilla, and salt until smooth.
    • Remove from heat and let thicken slightly.
    • French Toast
    • In a bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and salt.
    • Dip each slice of bread into the mixture, coating both sides without soaking too long.
    • Heat butter in a skillet over medium heat.
    • Cook bread 2 to 3 minutes per side until golden brown.

    • In a bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
    • Fold in miso caramel sauce gently.
    • Chill 10 to 15 minutes before serving.
    • Assembly
    • Stack french toast on a plate.
    • Drizzle warm miso caramel sauce over the top.
    • Add a dollop of miso caramel whipped topping.
    • Finish with flaky salt or cinnamon if desired.
